they have builds listed and both their benchmarks and difficulty level. the best power dps options currently as the one with the highest damage are catalyst, bladesworn, untamed, (bugged) vindicator, deadeye, weaver and spellbreaker. A little lower but viable are virtuoso, soulbeast (that excels in certain fights) and holosmith.
Weapons do matter but for open world it's not as important. As for good beginner classes Warrior, Ranger and Guardian are great picks. Necromancer is an easy class but it teaches bad habits because it's so tanky it tells you AoE isn't as dangerous as it actually is. Necromancer is a safe class to boost once you get the hang of the game though.

Guardians, Necromancers (especially Scourges) make the better WvW group classes. If you're solo you want escapes, damage, and some sustain. Thieves and mesmers make the best roaming classes. But honestly if you have the gear and the build a lot of things are viable. Meanwhile, for Spvp it depends what you want to do.

Self root is fine, self root where you spend 2-3 seconds to build a swing and then get 0 damage at all isn'tand that's way too common on a lot of fights. It's a fun class when it works, but more often than not the game's mechanics don't allow it to.
